The CDR-feature, enabled by default, is probably what you want. It stores it's logs, currently in CSV-format, to "/var/log/asterisk/cdr-csv/". If that directory doesn't exist, create it and restart Asterisk to get logging going. Most channel-drivers allow you to configure seperate log-files for some or all your stations / users.
